Note Culinaire August 21

I believe this is so true, and I’m guessing you probably do as well, dear reader. Welcome to another week of August with C’est si Bon. This week is all about one of the greatest American cooks of all time, and one of my favorites, Julia Child. Her birthday was August 15th, so this weeks recipes are a couple of my favorites that she was well known for.
The first is is a rich sautéed chicken with mushrooms and cream sauce. You start by sauteeing chicken and making a pan sauce with shallots and white wine. Then you add mushrooms and cream and what you end up with is a gorgeous, velvety and flavorful sauce that feels incredibly decadent for a weeknight dinner, but comes together quickly enough for one.
The other recipe, the Reine de Saba, or Queen of Sheba cake is truly a showstopper. It’s a light chocolate-almond cake that bakes up incredibly rich thanks to a combination of almond meal and cake flour mixed with whipped egg whites and melted chocolate. Take the time to properly mix your egg whites to stiff peaks before folding into the cake batter, and you will be rewarded with the richness of chocolate yet a light sponge cake that is a feast for the eyes and palate.
