Ted Lasso’s Shortbread Biscuits
Ingredients:
- 2 cups all-purpose flour
- ¾ cup powdered sugar
- 1 cup of unsalted butter, softened
- ¼ teaspoon of kosher salt
A few notes on making these:
- these have just a few ingredients and are so simple to make—just remember to rest the dough before baking
- here are the little pink boxes to serve the biscuits in if you want to be like Ted!
Directions
- preheat the oven to 300℉
- butter an 8-inch square baking pan and line with parchment
- Using a stand mixer or hand mixer, beat the butter for three to five minutes until it’s light and fluffy.
- Add the powdered sugar—very slowly, or you’ll get sugar everywhere.
- Next, add sifted flour and salt and mix until the dough comes together.
- Transfer the dough to the pan and flatten it using your hands or a metal measuring cup to ensure that it’s spread evenly.
- Chill dough in the refrigerator for 30 minutes and then bake for 45 to 60 minutes, or until it looks golden-brown but is still a little soft to the touch.
- Once the biscuits have finished baking, take the pan out of the oven and let it cool completely before cutting them into slices and serving
** slice into rectangles and serve in a pink cardboard box just like Ted :-)
